Lighten Up! Try these lighter versions of some classic recipes:

Cheddar 'N Ham Muffins

Makes: 9 servings

Prep time: 5 minutes

Cook time: 15 minutes

 

Ingredients:

1 cup shredded sharp white Cheddar cheese

1 oz grated Parmesan

1 3/4 cups reduced-fat all purpose baking mix

1 cup fat free milk

1/2 tsp ground black pepper

1/4 cup 97% fat-free ham, chopped fine

 

 

 

Directions:

Mix first four ingredients together, add pepper and ham. Mix well and spoon into lined muffin pans 1/2 full. Bake in preheated 400 degree F oven 12-15 minutes or until golden brown.

Easy Potatoes Au Gratin

Makes: 8 servings

Prep Time: 20 minutes

Cook Time: 60 minutes

 

Ingredients:

2 pound package of frozen southern-style hash brown potatoes; thawed

1 cup chopped onion

10 oz can cream of chicken soup (can also sub cream of mushroom)

1 cup fat free sour cream

1-1/2 cups shredded sharp Cheddar cheese

Pepper to taste

2 oz baked potato chips, crushed

24 broccoli spears (optional)

Directions:

Preheat oven to 375 degrees F. Lightly coat a 13x9" baking dish with nonstick cooking spray.

Combine potatoes, onion, soup, sour cream, cheese, and pepper in a bowl; mix well. Spoon mixture into prepared baking dish. Sprinkle with potato chips. Bake, uncovered, for 45 minutes.

Arrange the broccoli spears around the edge of the baking dish. Bake another 15 minutes or until gratin is bubbly and broccoli is tender.

Smoothies and Milk Mixers

For milk mixers, create your own recipes! In a blender, mix together your favorite naturally sweet ingredients like berries, mango or pineapple with honey and lowfat milk. Pour into a covered plastic cup and take it on the go!

 

 

 

Choco-nana Milk Mixer

Ingredients:

3 1/2 cups 1% lowfat milk

1 package (4-serving size) Chocolate Flavor Instant Pudding & Pie filling

1 tbsp creamy peanut butter

1 medium banana, peeled and cut into chunks.

Directions:

Pour 2 cups milk, pudding mix, peanut butter and banana into container with tight-fitting lid and shake until well blended, or put into blender and blend on medium speed 1 minute or until smooth. Pour into large pitcher. Add remaining 1 1/2 cups milk; stir until blended.

Serve at once or refrigerate and stir before servings. Mixture thickens as it stands. Thin with additional milk, if desired.

Strawberry Sunrise Smoothie

Ingredients:

1-1/2 cups cold fat free milk

1 container (8 oz) vanilla lowfat yogurt

1 cup frozen strawberries

Directions:

Place all ingredients in a blender in order listed; cover. Blend on high speed until smooth. Serve immediately.
